Our go-to birthday cake recipe

Quick Chocolate Cake (Taken from the New Tribes Missions cookbook)

1 1/2 cups of flour
1 cup of sugar
3 T. cocoa
1/2 tsp. of salt
1 tsp. of soda
1 cup of water
6 T. of oil
1 T. vinegar
1 tsp. of vanilla

Preheat oven to 350 degrees. Grease and flour a 8x8 inch square pan.
Mix together dry ingredients first. Then add wet ingredients in order given. Mix well and bake for about 25 minutes.

It's so easy to make, rich in flavor, and quick to bake. I made individual cakes by pouring the batter into a large muffin tin. Let them cool completely before inverting them onto a serving platter. Then drizzle with chocolate/peanut butter ganache.

Chocolate Peanut Butter Ganache
1 cup of chocolate chips
2 T. of milk (use more if ganache is too thick)
1 T. of peanut butter

Melt above ingredients in double broiler till smooth and spreadable.

Those little chocolate cakes made our day a little easier to get through. (Have I mentioned we're building a house?)
